Moscow King Chess is quite a lot of fun, I think. It's more or less standard FIDE chess (at least compared to other variants) except for the process of introducing pieces. To me, it has a touch of light heartedness to it. It takes a different kind of imagination, maybe. And there are more opportunities to fork the opponant with the drop, bishops, knights and even the lowly pawns. Ed Friedlander offers a java coffee game here: /play/erf/KingChss.html
